Ingredients

  • 4 cups apple cider
  • 4 cups sugar
  • 1 package powdered pectin

Instructions

  1. Combine cider and pectin in a large pot. Bring to a full rolling boil over high heat.
  2. Add sugar all at once, stirring constantly. Return to a rolling boil for 1 minute.
  3. Remove from heat and skim foam if necessary.
  4. Pour hot jelly into sterilized jars, leaving 1/4-inch headspace.
  5. Seal and process in a boiling-water bath for 10 minutes.

Spread this sparkling jelly on toast or warm biscuits. It also makes a lovely glaze for pork chops.
