Apricot Vanilla Jam

Sweet apricots and fragrant vanilla beans combine in this sunny jam. The result is a preserve with a delicate floral aroma and bright flavor.

Ingredients

  • 5 cups chopped apricots
  • 3 cups sugar
  • 1 vanilla bean, split and scraped
  • 2 tbsp lemon juice

Instructions

  1. Combine apricots, sugar, lemon juice and vanilla bean seeds and pod in a preserving pan.
  2. Bring to a boil, stirring constantly until sugar dissolves. Reduce heat and simmer until apricots break down.
  3. Continue cooking until jam thickens and holds its shape. Remove the vanilla bean pod.
  4. Fill hot, sterilized jars with jam, leaving 1/4-inch headspace.
  5. Wipe rims, apply lids and process in boiling water for 10 minutes. Let cool completely.

This jam is delicious on everything from toasted brioche to Greek yogurt. It also makes a lovely glaze for fruit tarts.
