Blackberry Sage Jam

Earthy sage and juicy blackberries create a jam with depth and complexity. It’s a grown-up spread that pairs beautifully with roasted meats as well as morning pastries.

Ingredients

  • 5 cups blackberries
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 1 tbsp finely chopped fresh sage

Instructions

  1. Combine blackberries, sugar and lemon juice in a jam pot. Bring to a boil over medium-high heat.
  2. Cook, stirring frequently, until the berries soften and the mixture thickens, 15–20 minutes.
  3. Stir in chopped sage during the last 5 minutes of cooking.
  4. Ladle jam into hot, sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
  5. Process in a boiling-water bath for 10 minutes. Let cool completely before storing.

Serve this jam with buttered toast or alongside roast pork or chicken. The herbal note makes it versatile for sweet and savory dishes.
