
Classic Strawberry Jam Recipe
Ingredients:
- 4 cups strawberries, hulled and halved
- 4 cups granulated sugar
- 1 tablespoon lemon juice
Instructions:
1. Prepare the strawberries: Rinse strawberries, remove stems, and halve or quarter depending on size. Mash them lightly to release juices.
2. Combine ingredients: In a large pot, mix the strawberries, sugar, and lemon juice. Let sit for 10 minutes to macerate.
3. Cook the mixture: Place the pot over medium heat, stirring until sugar dissolves. Bring to a boil and cook for 15-20 minutes, stirring frequently, until the jam thickens and reaches 220°F (105°C) on a candy thermometer.
4. Test consistency: Place a small amount of jam on a cold plate and run your finger through it; if it wrinkles and holds shape, it's ready. If not, continue cooking and test again.
5. Process jars: Ladle hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe rims clean, apply lids and bands, and process in a boiling water bath for 10 minutes (adjust for altitude as needed).
6. Cool and store: Remove jars and let cool for 24 hours. Check seals; label and store in a cool, dark place. Refrigerate any unsealed jars.
