Fig and Honey Spread

Ripe figs and floral honey make an elegant spread that’s less sweet than traditional jams. A touch of lemon brightens the flavors and keeps the color vibrant.

Ingredients

  • 2 lbs fresh figs, stemmed and chopped
  • 1 cup honey
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • Zest of one lemon

Instructions

  1. Combine figs, honey, sugar, lemon juice and zest in a saucepan and let sit for 15 minutes to draw out juices.
  2. Cook over medium heat, stirring frequently, until the figs soften and the mixture thickens, 30–40 minutes.
  3. Mash with a fork for a rustic texture or purée for a smoother spread.
  4. Spoon hot spread into sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
  5. Process in boiling water for 10 minutes. Let cool before storing.

This spread shines on a cheese platter—try it with blue cheese or Brie—or slathered on buttered toast.
