
Golden Peach Ginger Jam Canning Recipe
Golden peach ginger jam combines the bright flavor of ripe peaches with the warm, spicy kick of ginger for a spread that's truly irresistible.
Key Ingredients:
• 5 pounds ripe peaches, peeled, pitted and chopped
• 4 cups granulated sugar
• 2 tablespoons freshly grated ginger
• Zest and juice of 1 lemon
• 1 teaspoon ground cinnamon (optional)
Instructions:
1. Prepare the peaches by blanching them in boiling water for 30 seconds, then plunging them into ice water. Peel off the skins, remove the pits and chop the fruit.
2. In a large saucepan or jam pot, combine the chopped peaches, sugar, grated ginger, lemon zest and juice, and cinnamon if using.
3. Cook over medium heat, stirring occasionally, until the fruit softens and releases its juices, about 20–25 minutes.
4. Use an immersion blender to blend the mixture to your desired consistency – smooth or slightly chunky.
5. Continue simmering the jam until it thickens to a jam-like consistency, about 45–60 minutes.
6. While the jam cooks, sterilize your canning jars and lids by boiling them or running them through the dishwasher.
7. Once the jam has reached the desired thickness, ladle it into the hot jars, leaving about 1/4-inch headspace. Wipe rims, apply lids and screw on bands until fingertip tight.
8. Process the jars in a boiling water bath for 10 minutes (adjust time for altitude if necessary). Turn off the heat and let the jars sit in the water for another 5 minutes before removing.
9. Remove the jars carefully to a towel-lined counter and let them cool for 12–24 hours. Check seals by pressing the center of each lid – if it doesn't pop back, the jar is sealed.
10. Label the jars with the date and store them in a cool, dark place. Refrigerate any jars that did not seal and use them first.
