Harvest Apple Butter Canning Recipe

Nothing says fall quite like the scent of apples simmering on the stove. This apple butter uses a mix of tart and sweet apples cooked slowly with cider and warm spices, concentrating their flavors into a thick, spreadable butter. It's a great way to use up an abundant apple harvest and makes your kitchen smell heavenly.

Ingredients

  • 6 lbs mixed apples, peeled, cored and chopped
  • 2 cups apple cider
  • 2 cups brown sugar (adjust to taste)
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp fresh grated nutmeg
  • 1 tbsp lemon juice

Instructions

  1. Combine apples, cider and lemon juice in a large Dutch oven. Bring to a simmer over medium heat and cook until the apples break down, about 30 minutes.
  2. Use an immersion blender to purée the mixture until smooth. Stir in brown sugar and spices.
  3. Reduce heat to low and cook uncovered, stirring frequently to prevent sticking, until thick and glossy, 1–2 hours.
  4. Sterilize jars, lids and bands. Ladle hot apple butter into jars, leaving 1/4-inch headspace.
  5. Wipe rims, apply lids and bands, and process in a boiling-water bath for 10 minutes. Cool and check seals before storing.
