Mixed Berry Chia Jam
Chia seeds thicken this quick, no-pectin jam while adding fiber and omega-3s. Use any combination of berries you have on hand—strawberries, blueberries, blackberries or raspberries all work well.
Ingredients
- 4 cups mixed berries
- 1/4 cup honey or maple syrup
- 1 tbsp lemon juice
- 3 tbsp chia seeds
Instructions
- Place berries and sweetener in a saucepan. Cook over medium heat, mashing the fruit with a fork or potato masher.
- Once the berries have broken down, stir in lemon juice and simmer for 5 minutes.
- Remove from heat and stir in chia seeds. Let sit for 10 minutes to thicken; stir occasionally.
- Pour warm jam into clean jars. This refrigerator jam keeps for up to two weeks.
- For longer storage, process in a boiling-water bath for 10 minutes, though the texture will be slightly different.
Use this chia jam as a topping for overnight oats or swirl it into smoothies for a nutrient boost.
