Key Ingredients:
• 6 pounds ripe plums, pitted and chopped
• 3 cups granulated sugar
• 1 cup brown sugar
• 1 tablespoon ground cinnamon
• 1 teaspoon ground cloves
• 1 teaspoon ground allspice
• Zest and juice of 1 lemon
Instructions:
1. In a large pot, combine the chopped plums, granulated sugar, brown sugar, cinnamon, cloves, allspice, lemon zest, and lemon juice.
2. Cook over medium heat, stirring occasionally, until the plums soften and release their juices.
3. Use an immersion blender to puree the mixture until smooth or leave slightly chunky for texture.
4. Continue to cook on low heat, stirring frequently, until the mixture thickens to a butter-like consistency (about 45–60 minutes).
5. Prepare jars and lids by sterilizing them in boiling water or a dishwasher.
6. Ladle the hot plum butter into sterilized jars, leaving 1/4-inch headspace. Wipe rims, apply lids, and screw on bands until fingertip tight.
7. Process the jars in a boiling water bath canner for 10 minutes (adjust for altitude as needed). Turn off heat, remove lid, and let jars sit in the water for 5 minutes.
8. Carefully remove jars and place on a towel-lined countertop to cool. After 12–24 hours, check seals by pressing the center of each lid. Any unsealed jars should be refrigerated and used first.
9. Label and store sealed jars in a cool, dark place. Enjoy your spiced plum butter on toast, yogurt, or as a glaze for meats.
