Strawberry Basil Jam
A hint of fresh basil elevates classic strawberry jam into something special. The herb adds a subtle savory note that balances the sweetness of the berries.
Ingredients
- 6 cups strawberries, hulled and quartered
- 3 cups sugar
- 2 tbsp lemon juice
- 1/4 cup finely chopped fresh basil
Instructions
- Mix strawberries, sugar and lemon juice in a large pot. Let sit for 30 minutes to draw out juices.
- Bring to a boil, then reduce to a simmer and cook until strawberries soften and jam thickens.
- Stir in chopped basil during the final 5 minutes of cooking to preserve its fresh flavor.
- Pour jam into hot, sterilized jars, leaving 1/4-inch headspace. Cap and process for 10 minutes.
- Allow jars to cool undisturbed. Store in a cool, dark place.
Spread this jam on crusty bread, pair it with goat cheese or use it as a filling for sandwich cookies.
