Blueberry Lavender Jam

This jam marries juicy blueberries with the gentle floral scent of culinary lavender. It’s a sophisticated twist on a classic preserve that will delight at breakfast or tea time.

Ingredients

  • 6 cups blueberries
  • 3 cups granulated sugar
  • 2 tbsp lemon juice
  • 2 tsp dried culinary lavender
  • 1 package pectin (optional)

Instructions

  1. Gently crush blueberries in a jam pot and stir in sugar and lemon juice.
  2. Bring to a boil over medium-high heat, then reduce and simmer until berries burst and juice thickens.
  3. If using pectin, add according to package directions for a firmer set.
  4. Stir in dried lavender during the last few minutes of cooking so its flavor infuses without becoming bitter.
  5. Ladle hot jam into sterilized jars, leaving 1/4-inch headspace, and process in a boiling-water bath for 10 minutes.

The subtle floral note makes this jam perfect for topping scones or spreading on goat cheese crostini.
