Peach Jalapeño Jam
This sweet-and-spicy jam combines juicy peaches with fresh jalapeños for a condiment that perks up toast, cheese plates and grilled meats. The heat level is easily adjustable to your taste.
Ingredients
- 5 cups peeled, chopped peaches
 - 3 cups sugar
 - 2–3 jalapeños, seeded and finely minced
 - 2 tbsp lemon juice
 
Instructions
- In a heavy pot, mix peaches, sugar and lemon juice. Bring to a boil, stirring until sugar dissolves.
 - Add minced jalapeños and reduce heat; simmer until the mixture thickens and peach pieces become translucent.
 - Taste and adjust heat by adding more jalapeños if desired.
 - Ladle hot jam into prepared jars, leaving 1/4-inch headspace, then seal.
 - Process jars in a boiling-water bath for 10 minutes. Let cool and label.
 
Serve this jam with cream cheese and crackers, or brush it over pork tenderloin as a glaze.
