
Raspberry Rose Jam

Ingredients
- 6 cups fresh raspberries
- 3 cups granulated sugar
- 2 tbsp lemon juice
- 1 tbsp dried culinary rose petals or 2 tsp rose water
- 1 package pectin (optional, for firmer set)
Instructions
- Gently mash raspberries in a jam pot. Stir in sugar and lemon juice and bring to a boil over medium-high heat.
- Cook, stirring constantly, until mixture reaches 220°F or passes the wrinkle test. Skim off foam if necessary.
- If using pectin, follow package directions to add at the proper time for your desired set.
- Stir in rose petals or rose water at the end of cooking to preserve their delicate flavor.
- Ladle jam into sterilized jars, leaving 1/4-inch headspace. Seal and process in a boiling-water bath for 10 minutes.
Use this jam to elevate simple buttered toast or dollop it on almond cake. The gentle floral fragrance makes every bite feel special.
