
Blueberry Vanilla Bean Jam Canning Recipe
This rich and fragrant blueberry jam is elevated with the aromatic flavor of vanilla bean. Perfect for spreading on toast, mixing into yogurt or gifting during harvest season.
Ingredients:
- 6 cups fresh blueberries
- 1 vanilla bean, split and scraped
- 4 cups granulated sugar
- 2 tbsp lemon juice
- 1 packet (1.75 oz) pectin (optional)
Instructions:
1. Prepare your canning equipment: sterilize jars, lids, and prepare a boiling-water canner.
2. In a large pot, combine the blueberries, vanilla bean seeds and pod, sugar, and lemon juice. Mash the berries slightly and bring to a boil over medium-high heat.
3. Stir frequently and boil until the mixture thickens, about 15-20 minutes. If using pectin, stir it in according to the package instructions.
4. Remove the vanilla bean pod. Ladle the hot jam into prepared jars, leaving about 1/4-inch headspace.
5. Wipe the rims clean, apply lids and bands, and process the jars in a boiling water bath for 10 minutes.
6. Remove the jars to a towel-lined counter and let them cool completely. Check seals, label, and store.
