Cucumber Mint Pickles
Light and refreshing, these pickles combine crisp cucumbers with cooling mint and a hint of sweetness. They’re ideal for summer picnics or as a palate cleanser.
Ingredients
- 4 cups cucumber spears
- 2 cups water
- 2 cups white vinegar
- 1/4 cup sugar
- 2 tbsp kosher salt
- 1/4 cup fresh mint leaves
- 1 tsp mustard seeds
Instructions
- Pack cucumber spears and mint leaves into sterilized jars.
- Bring water, vinegar, sugar, salt and mustard seeds to a boil to make brine.
- Pour hot brine over cucumbers, ensuring they’re fully covered.
- Seal jars and process in a boiling-water bath for 10 minutes, or refrigerate for quick pickles.
- Allow flavors to develop for at least 48 hours before serving.
Serve these pickles alongside grilled kebabs or use them to brighten up grain bowls and sandwiches.
