Cucumber Mint Pickles

Light and refreshing, these pickles combine crisp cucumbers with cooling mint and a hint of sweetness. They’re ideal for summer picnics or as a palate cleanser.

Ingredients

  • 4 cups cucumber spears
  • 2 cups water
  • 2 cups white vinegar
  • 1/4 cup sugar
  • 2 tbsp kosher salt
  • 1/4 cup fresh mint leaves
  • 1 tsp mustard seeds

Instructions

  1. Pack cucumber spears and mint leaves into sterilized jars.
  2. Bring water, vinegar, sugar, salt and mustard seeds to a boil to make brine.
  3. Pour hot brine over cucumbers, ensuring they’re fully covered.
  4. Seal jars and process in a boiling-water bath for 10 minutes, or refrigerate for quick pickles.
  5. Allow flavors to develop for at least 48 hours before serving.

Serve these pickles alongside grilled kebabs or use them to brighten up grain bowls and sandwiches.
