Herb-Infused Peach Jam
Fresh peaches get an aromatic lift from thyme and rosemary in this herb-infused jam. It’s a savory-sweet spread that works as well on cheese boards as it does on toast.
Ingredients
- 5 cups peeled, chopped peaches
- 3 cups sugar
- 2 tbsp lemon juice
- 1 sprig fresh thyme
- 1 sprig fresh rosemary
Instructions
- Combine peaches, sugar and lemon juice in a preserving pot. Bring to a boil, stirring to dissolve sugar.
- Tie herbs in cheesecloth or add whole sprigs to the pot. Simmer until jam thickens and reaches gel stage.
- Remove herb sprigs. Ladle jam into sterilized jars, leaving 1/4-inch headspace.
- Seal jars and process in a boiling-water bath for 10 minutes.
- Cool completely before storing.
This jam pairs beautifully with goat cheese, grilled chicken or spooned over polenta.
