Herb-Infused Peach Jam

Fresh peaches get an aromatic lift from thyme and rosemary in this herb-infused jam. It’s a savory-sweet spread that works as well on cheese boards as it does on toast.

Ingredients

  • 5 cups peeled, chopped peaches
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary

Instructions

  1. Combine peaches, sugar and lemon juice in a preserving pot. Bring to a boil, stirring to dissolve sugar.
  2. Tie herbs in cheesecloth or add whole sprigs to the pot. Simmer until jam thickens and reaches gel stage.
  3. Remove herb sprigs. Ladle jam into sterilized jars, leaving 1/4-inch headspace.
  4. Seal jars and process in a boiling-water bath for 10 minutes.
  5. Cool completely before storing.

This jam pairs beautifully with goat cheese, grilled chicken or spooned over polenta.
