Pomegranate Apple Jelly
Ruby-red pomegranates and tart apples create a jewel-like jelly that’s both sweet and tangy. Perfect for holiday tables or as a gourmet gift.
Ingredients
- 3 cups pomegranate juice
- 2 cups apple juice
- 5 cups sugar
- 1 package powdered pectin
Instructions
- Combine pomegranate and apple juices in a large pot. Stir in pectin and bring to a rolling boil over high heat.
- Add sugar all at once, stirring constantly. Return to a full rolling boil and boil hard for 1 minute.
- Remove from heat and skim foam if necessary.
- Ladle hot jelly into sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
- Process in a boiling-water bath for 10 minutes. Let cool and set.
Serve this tart-sweet jelly with soft cheese, on breakfast pastries or as a glaze for roasted pork.
