Pomegranate Apple Jelly

Ruby-red pomegranates and tart apples create a jewel-like jelly that’s both sweet and tangy. Perfect for holiday tables or as a gourmet gift.

Ingredients

  • 3 cups pomegranate juice
  • 2 cups apple juice
  • 5 cups sugar
  • 1 package powdered pectin

Instructions

  1. Combine pomegranate and apple juices in a large pot. Stir in pectin and bring to a rolling boil over high heat.
  2. Add sugar all at once, stirring constantly. Return to a full rolling boil and boil hard for 1 minute.
  3. Remove from heat and skim foam if necessary.
  4. Ladle hot jelly into sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
  5. Process in a boiling-water bath for 10 minutes. Let cool and set.

Serve this tart-sweet jelly with soft cheese, on breakfast pastries or as a glaze for roasted pork.
