Spiced Pineapple Jam

This tropical jam combines sweet pineapple with warm spices like cinnamon and star anise. It’s an exotic spread that brings sunshine to your breakfast table.

Ingredients

  • 4 cups diced pineapple
  • 3 cups sugar
  • 1/4 cup lemon juice
  • 1 cinnamon stick
  • 2 whole star anise

Instructions

  1. Combine pineapple, sugar and lemon juice in a preserving pan and let sit for 15 minutes.
  2. Add cinnamon stick and star anise and bring to a boil, stirring until sugar dissolves.
  3. Simmer until pineapple becomes translucent and jam thickens, about 25 minutes.
  4. Remove spices. Fill sterilized jars leaving 1/4-inch headspace.
  5. Process jars in boiling water for 10 minutes. Cool before labeling.

Spread this jam on toast or use it as a glaze for ham and grilled chicken. Its spiced aroma will transport you to the tropics.
