Spiced Pineapple Jam
This tropical jam combines sweet pineapple with warm spices like cinnamon and star anise. It’s an exotic spread that brings sunshine to your breakfast table.
Ingredients
- 4 cups diced pineapple
- 3 cups sugar
- 1/4 cup lemon juice
- 1 cinnamon stick
- 2 whole star anise
Instructions
- Combine pineapple, sugar and lemon juice in a preserving pan and let sit for 15 minutes.
- Add cinnamon stick and star anise and bring to a boil, stirring until sugar dissolves.
- Simmer until pineapple becomes translucent and jam thickens, about 25 minutes.
- Remove spices. Fill sterilized jars leaving 1/4-inch headspace.
- Process jars in boiling water for 10 minutes. Cool before labeling.
Spread this jam on toast or use it as a glaze for ham and grilled chicken. Its spiced aroma will transport you to the tropics.
