Strawberry Champagne Jam

Elevate strawberry jam by adding a splash of champagne for a hint of effervescence and sophistication. It’s perfect for special occasions.

Ingredients

  • 5 cups chopped strawberries
  • 3 cups sugar
  • 1 cup champagne or sparkling wine
  • 2 tbsp lemon juice

Instructions

  1. Combine strawberries, sugar and lemon juice in a large pot. Bring to a boil, stirring until sugar dissolves.
  2. Cook until mixture thickens and strawberries soften. Add champagne and continue cooking until jam reaches gel stage.
  3. Skim off foam if necessary.
  4. Ladle jam into hot jars, leaving 1/4-inch headspace. Wipe rims and cap.
  5. Process in boiling water for 10 minutes. Allow to cool completely.

Serve this celebratory jam on scones, in layered cakes or as a fancy topping for crepes.
