Tomato Basil Jam
Sun-ripened tomatoes transform into a luscious jam with the addition of fresh basil and a touch of spice. It’s a savory-sweet spread that elevates everything from grilled cheese to charcuterie.
Ingredients
- 5 cups chopped tomatoes
- 3 cups sugar
- 2 tbsp lemon juice
- 2 tbsp finely chopped fresh basil
- 1/4 tsp red pepper flakes
Instructions
- Combine tomatoes, sugar and lemon juice in a pot. Bring to a boil and cook, stirring frequently, until thickened and glossy.
- Add red pepper flakes for a hint of heat.
- Stir in chopped basil during the last 5 minutes of cooking to preserve its fresh flavor.
- Ladle hot jam into sterilized jars, leaving 1/4-inch headspace.
- Seal and process in a boiling-water bath for 10 minutes.
Try this jam on grilled cheese sandwiches, with goat cheese or as a topping for roasted chicken.
