Tomato Basil Jam

Sun-ripened tomatoes transform into a luscious jam with the addition of fresh basil and a touch of spice. It’s a savory-sweet spread that elevates everything from grilled cheese to charcuterie.

Ingredients

  • 5 cups chopped tomatoes
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 2 tbsp finely chopped fresh basil
  • 1/4 tsp red pepper flakes

Instructions

  1. Combine tomatoes, sugar and lemon juice in a pot. Bring to a boil and cook, stirring frequently, until thickened and glossy.
  2. Add red pepper flakes for a hint of heat.
  3. Stir in chopped basil during the last 5 minutes of cooking to preserve its fresh flavor.
  4. Ladle hot jam into sterilized jars, leaving 1/4-inch headspace.
  5. Seal and process in a boiling-water bath for 10 minutes.

Try this jam on grilled cheese sandwiches, with goat cheese or as a topping for roasted chicken.
