Blueberry Basil Jam

Aromatic basil adds an unexpected twist to classic blueberry jam. The herb’s peppery notes complement the sweetness of the berries for a nuanced spread.

Ingredients

  • 6 cups blueberries
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 1/4 cup finely chopped fresh basil

Instructions

  1. Combine blueberries, sugar and lemon juice in a jam pot. Bring to a boil, stirring frequently.
  2. Cook until the mixture thickens and reaches gel stage.
  3. Stir in chopped basil off the heat to preserve its bright flavor.
  4. Pour jam into sterilized jars, leaving 1/4-inch headspace.
  5. Process in boiling water for 10 minutes. Cool before storing.

Spread this jam on toast, swirl it into ice cream or pair it with a creamy Brie.
