Caramelized Onion Jam

Deeply caramelized onions create a savory jam that’s rich and spreadable. A splash of balsamic vinegar and a hint of thyme add complexity.

Ingredients

  • 4 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tsp fresh thyme leaves
  • 1/2 tsp salt

Instructions

  1. Heat olive oil in a large skillet and add sliced onions. Cook over low heat, stirring occasionally, until onions turn golden and caramelized, about 40 minutes.
  2. Stir in brown sugar and balsamic vinegar and cook until thick and jammy.
  3. Add thyme and salt to taste.
  4. Transfer hot onion jam to sterilized jars, leaving 1/4-inch headspace.
  5. Seal and process in a boiling-water bath for 10 minutes or refrigerate for immediate use.

This savory jam is excellent on burgers, grilled cheese sandwiches or served with roast beef.
