Caramelized Onion Jam
Deeply caramelized onions create a savory jam that’s rich and spreadable. A splash of balsamic vinegar and a hint of thyme add complexity.
Ingredients
- 4 large onions, thinly sliced
- 2 tbsp olive oil
- 1/4 cup brown sugar
- 1/4 cup balsamic vinegar
- 1 tsp fresh thyme leaves
- 1/2 tsp salt
Instructions
- Heat olive oil in a large skillet and add sliced onions. Cook over low heat, stirring occasionally, until onions turn golden and caramelized, about 40 minutes.
- Stir in brown sugar and balsamic vinegar and cook until thick and jammy.
- Add thyme and salt to taste.
- Transfer hot onion jam to sterilized jars, leaving 1/4-inch headspace.
- Seal and process in a boiling-water bath for 10 minutes or refrigerate for immediate use.
This savory jam is excellent on burgers, grilled cheese sandwiches or served with roast beef.
