Fig Balsamic Jam

Sweet figs and tangy balsamic vinegar form a sophisticated jam that pairs wonderfully with cheese and charcuterie.

Ingredients

  • 2 lbs fresh figs, chopped
  • 1 1/2 cups sugar
  • 1/4 cup balsamic vinegar
  • 1/4 cup lemon juice
  • 1/2 tsp ground cinnamon

Instructions

  1. Combine figs, sugar, balsamic vinegar, lemon juice and cinnamon in a preserving pan.
  2. Bring to a boil, then reduce heat and simmer until figs break down and jam thickens, about 30 minutes.
  3. Mash or puree for desired texture.
  4. Pour jam into sterilized jars, leaving 1/4-inch headspace.
  5. Process in a boiling-water bath for 10 minutes. Let cool and store.

Serve this jam with cheese boards, on crostini or as a glaze for roasted vegetables.
