Pear Ginger Chutney
This savory-sweet chutney blends ripe pears with fresh ginger, onions and a touch of spice. It’s fantastic with curries or as a condiment for roasted meats.
Ingredients
- 4 cups diced pears
- 1 cup diced onion
- 1 cup apple cider vinegar
- 1 cup brown sugar
- 2 tbsp grated fresh ginger
- 1/2 cup golden raisins
- 1/2 tsp mustard seeds
- 1/4 tsp cayenne
Instructions
- Combine pears, onion, vinegar, sugar, ginger, raisins, mustard seeds and cayenne in a heavy saucepan.
- Bring to a boil over medium heat, stirring until sugar dissolves.
- Reduce heat and simmer until the mixture thickens and the pears become translucent, about 40 minutes.
- Pack hot chutney into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
- Process in a boiling-water bath for 15 minutes. Cool and store.
This chutney pairs well with sharp cheddar, curry dishes or as a condiment for sandwiches.
