Pear Ginger Chutney

This savory-sweet chutney blends ripe pears with fresh ginger, onions and a touch of spice. It’s fantastic with curries or as a condiment for roasted meats.

Ingredients

  • 4 cups diced pears
  • 1 cup diced onion
  • 1 cup apple cider vinegar
  • 1 cup brown sugar
  • 2 tbsp grated fresh ginger
  • 1/2 cup golden raisins
  • 1/2 tsp mustard seeds
  • 1/4 tsp cayenne

Instructions

  1. Combine pears, onion, vinegar, sugar, ginger, raisins, mustard seeds and cayenne in a heavy saucepan.
  2. Bring to a boil over medium heat, stirring until sugar dissolves.
  3. Reduce heat and simmer until the mixture thickens and the pears become translucent, about 40 minutes.
  4. Pack hot chutney into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
  5. Process in a boiling-water bath for 15 minutes. Cool and store.

This chutney pairs well with sharp cheddar, curry dishes or as a condiment for sandwiches.
