Spiced Tomato Jam
Tomatoes aren’t just for sauce—when cooked down with sugar and spices they become a savory-sweet jam that’s wonderful with cheese and meats.
Ingredients
- 6 cups peeled, chopped tomatoes
- 3 cups sugar
- 1/4 cup cider vinegar
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
Instructions
- Combine tomatoes, sugar and vinegar in a pot. Bring to a boil and cook, stirring often, until thickened.
- Stir in ginger, cinnamon and cloves and continue cooking until jam reaches desired consistency.
- Ladle into hot jars, leaving 1/4-inch headspace.
- Seal and process in boiling water for 15 minutes.
- Let cool and store for at least a week to allow flavors to meld.
Serve this jam with sharp cheddar, spread it on burgers or use it as a glaze for meatloaf.
