Sweet Corn Relish

This colorful relish features sweet corn kernels with bell peppers, onions and a tangy brine. It’s a perfect companion for hot dogs, burgers and grilled fish.

Ingredients

  • 4 cups fresh corn kernels
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 1/2 cups apple cider vinegar
  • 1 cup sugar
  • 1 tsp celery seeds
  • 1 tsp mustard seeds

Instructions

  1. Combine corn, peppers, onion, vinegar, sugar, celery seeds and mustard seeds in a large pot.
  2. Bring to a boil, then reduce heat and simmer until vegetables are tender and liquid has reduced, about 20 minutes.
  3. Pack hot relish into sterilized jars, leaving 1/2-inch headspace.
  4. Adjust headspace, wipe rims and apply lids.
  5. Process in a boiling-water bath for 15 minutes. Cool and store for at least two weeks before using.

Use this relish to brighten up grilled sausages, tacos or as a topping for tuna salad.
