Sweet Pepper Relish

A medley of red, green and yellow bell peppers is cooked with onions and vinegar to create a sweet-tart relish that perks up burgers, sausages and more.

Ingredients

  • 2 cups diced red bell pepper
  • 2 cups diced green bell pepper
  • 2 cups diced yellow bell pepper
  • 1 cup diced onion
  • 1 1/2 cups sugar
  • 1 cup white vinegar
  • 1 tsp celery seeds

Instructions

  1. Combine peppers, onion, sugar, vinegar and celery seeds in a large saucepan.
  2. Bring to a boil, then reduce heat and simmer until vegetables soften and mixture thickens, about 25 minutes.
  3. Pack hot relish into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
  4. Process in a boiling-water bath for 10 minutes.
  5. Cool and store. Flavors improve after a week.

Use this colorful relish to top hot dogs, mix into tuna salad or serve with grilled fish.
