Sweet Pepper Relish
A medley of red, green and yellow bell peppers is cooked with onions and vinegar to create a sweet-tart relish that perks up burgers, sausages and more.
Ingredients
- 2 cups diced red bell pepper
- 2 cups diced green bell pepper
- 2 cups diced yellow bell pepper
- 1 cup diced onion
- 1 1/2 cups sugar
- 1 cup white vinegar
- 1 tsp celery seeds
Instructions
- Combine peppers, onion, sugar, vinegar and celery seeds in a large saucepan.
- Bring to a boil, then reduce heat and simmer until vegetables soften and mixture thickens, about 25 minutes.
- Pack hot relish into sterilized jars, leaving 1/2-inch headspace. Wipe rims and seal.
- Process in a boiling-water bath for 10 minutes.
- Cool and store. Flavors improve after a week.
Use this colorful relish to top hot dogs, mix into tuna salad or serve with grilled fish.
