Apple Cranberry Butter

Apples and cranberries cook down into a vibrant, tangy butter that’s perfect for autumn. A touch of orange zest adds brightness.

Ingredients

  • 5 lbs apples, peeled and chopped
  • 3 cups cranberries
  • 2 cups sugar
  • 1 cup apple cider
  • Zest and juice of one orange
  • 1 tsp cinnamon

Instructions

  1. Combine apples, cranberries, sugar, cider, orange zest and juice in a large pot. Bring to a boil.
  2. Reduce heat and simmer until fruit breaks down, about 40 minutes.
  3. Purée with an immersion blender, then continue to cook on low heat, stirring often, until thick.
  4. Stir in cinnamon. Ladle butter into sterilized jars, leaving 1/4-inch headspace.
  5. Process in boiling water for 10 minutes. Cool and store.

Spread this jewel-toned butter on toast or pair it with roast turkey and pork.
