Apple Cranberry Butter
Apples and cranberries cook down into a vibrant, tangy butter that’s perfect for autumn. A touch of orange zest adds brightness.
Ingredients
- 5 lbs apples, peeled and chopped
- 3 cups cranberries
- 2 cups sugar
- 1 cup apple cider
- Zest and juice of one orange
- 1 tsp cinnamon
Instructions
- Combine apples, cranberries, sugar, cider, orange zest and juice in a large pot. Bring to a boil.
- Reduce heat and simmer until fruit breaks down, about 40 minutes.
- Purée with an immersion blender, then continue to cook on low heat, stirring often, until thick.
- Stir in cinnamon. Ladle butter into sterilized jars, leaving 1/4-inch headspace.
- Process in boiling water for 10 minutes. Cool and store.
Spread this jewel-toned butter on toast or pair it with roast turkey and pork.
