Cherry Almond Butter
Cherries and almond extract create a luxurious fruit butter that tastes like cherry pie filling. It’s silky-smooth and deeply flavored.
Ingredients
- 6 cups pitted cherries
- 2 cups sugar
- 1 tsp almond extract
- 2 tbsp lemon juice
Instructions
- Place cherries, sugar and lemon juice in a heavy pot. Cook over medium heat until cherries soften.
- Puree the mixture with an immersion blender for a smooth texture.
- Continue cooking on low heat, stirring often, until thickened.
- Stir in almond extract at the end. Fill sterilized jars, leaving 1/4-inch headspace.
- Process jars in a boiling-water bath for 10 minutes. Cool and store.
Spread this butter on scones or use it as a filling for pastries and tarts.
