Cherry Almond Butter

Cherries and almond extract create a luxurious fruit butter that tastes like cherry pie filling. It’s silky-smooth and deeply flavored.

Ingredients

  • 6 cups pitted cherries
  • 2 cups sugar
  • 1 tsp almond extract
  • 2 tbsp lemon juice

Instructions

  1. Place cherries, sugar and lemon juice in a heavy pot. Cook over medium heat until cherries soften.
  2. Puree the mixture with an immersion blender for a smooth texture.
  3. Continue cooking on low heat, stirring often, until thickened.
  4. Stir in almond extract at the end. Fill sterilized jars, leaving 1/4-inch headspace.
  5. Process jars in a boiling-water bath for 10 minutes. Cool and store.

Spread this butter on scones or use it as a filling for pastries and tarts.
