Ginger Pear Marmalade

Chunks of pear suspended in a ginger-scented gel make this marmalade a standout. It has a pleasant bite and a subtle sweetness.

Ingredients

  • 4 cups diced pears
  • 2 cups sugar
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp finely grated fresh ginger

Instructions

  1. Combine pears, sugar, water and lemon juice in a pot. Bring to a simmer and cook until pears are tender.
  2. Add grated ginger and continue cooking until mixture thickens and sets.
  3. Ladle marmalade into sterilized jars, leaving 1/4-inch headspace.
  4. Wipe rims, seal jars and process in boiling water for 10 minutes.
  5. Allow to cool and check seals before storing.

This marmalade is wonderful on buttered toast or served with roast pork. The ginger provides a gentle warmth.
