Ginger Pear Marmalade
Chunks of pear suspended in a ginger-scented gel make this marmalade a standout. It has a pleasant bite and a subtle sweetness.
Ingredients
- 4 cups diced pears
- 2 cups sugar
- 1 cup water
- 2 tbsp lemon juice
- 2 tbsp finely grated fresh ginger
Instructions
- Combine pears, sugar, water and lemon juice in a pot. Bring to a simmer and cook until pears are tender.
- Add grated ginger and continue cooking until mixture thickens and sets.
- Ladle marmalade into sterilized jars, leaving 1/4-inch headspace.
- Wipe rims, seal jars and process in boiling water for 10 minutes.
- Allow to cool and check seals before storing.
This marmalade is wonderful on buttered toast or served with roast pork. The ginger provides a gentle warmth.
