Orange Cardamom Jam

Fragrant cardamom infuses this bright orange jam with an exotic aroma. It’s a delightful accompaniment to breakfast or afternoon tea.

Ingredients

  • 5 cups chopped oranges (peeled and segmented)
  • 3 cups sugar
  • 1 tsp ground cardamom
  • 2 tbsp lemon juice

Instructions

  1. Combine oranges, sugar and lemon juice in a preserving pan. Bring to a boil.
  2. Cook until fruit softens and mixture thickens.
  3. Stir in ground cardamom during the last few minutes of cooking.
  4. Ladle jam into sterilized jars, leaving 1/4-inch headspace.
  5. Process in a boiling-water bath for 10 minutes. Cool and store.

Serve this jam on toast or use it to fill thumbprint cookies. The spice adds warmth and depth.
