Blackberry Lime Jam

Juicy blackberries meet zesty lime in this bright and tangy jam. It’s a beautiful spread for scones or yogurt.

Ingredients

  • 5 cups blackberries
  • 3 cups sugar
  • 2 tbsp lime juice
  • 1 tbsp lime zest

Instructions

  1. Mix blackberries, sugar and lime juice in a preserving pot. Bring to a boil.
  2. Cook, stirring frequently, until jam thickens and berries break down.
  3. Stir in lime zest just before filling jars.
  4. Ladle jam into sterilized jars, leaving 1/4-inch headspace.
  5. Process in boiling water for 10 minutes. Cool before storing.

This jam is delicious on pancakes or stirred into cocktails for a berry-lime twist.
