Blackberry Lime Jam
Juicy blackberries meet zesty lime in this bright and tangy jam. It’s a beautiful spread for scones or yogurt.
Ingredients
- 5 cups blackberries
- 3 cups sugar
- 2 tbsp lime juice
- 1 tbsp lime zest
Instructions
- Mix blackberries, sugar and lime juice in a preserving pot. Bring to a boil.
- Cook, stirring frequently, until jam thickens and berries break down.
- Stir in lime zest just before filling jars.
- Ladle jam into sterilized jars, leaving 1/4-inch headspace.
- Process in boiling water for 10 minutes. Cool before storing.
This jam is delicious on pancakes or stirred into cocktails for a berry-lime twist.
