Pear Almond Jam

Delicate pears meet nutty almonds in this refined jam. A splash of amaretto or almond extract enhances the flavor.

Ingredients

  • 5 cups diced pears
  • 3 cups sugar
  • 2 tbsp lemon juice
  • 1/2 tsp almond extract
  • 1/4 cup sliced almonds

Instructions

  1. Combine pears, sugar and lemon juice in a pot. Bring to a boil and cook until pears soften.
  2. Stir in almond extract and continue simmering until jam thickens.
  3. Add sliced almonds just before filling jars.
  4. Ladle jam into sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
  5. Process in a boiling-water bath for 10 minutes.

Spread this jam on croissants or pair it with soft cheeses for an elegant appetizer.
