Pumpkin Cranberry Relish
This savory relish combines cubed pumpkin with tart cranberries and spices. It’s a colorful addition to holiday tables.
Ingredients
- 3 cups cubed pumpkin or butternut squash
- 2 cups fresh cranberries
- 1 cup diced onion
- 1 cup apple cider vinegar
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
Instructions
- Combine pumpkin, cranberries, onion, vinegar, sugar and spices in a saucepan.
- Bring to a boil, then reduce heat and simmer until pumpkin is tender and cranberries have burst, about 30 minutes.
- Pack hot relish into sterilized jars, leaving 1/2-inch headspace. Seal.
- Process in a boiling-water bath for 15 minutes.
- Cool and store. Flavors improve after a week.
Serve this relish with roast turkey, ham or alongside cheese platters.
