Apricot Vanilla Jam
Sweet apricots and fragrant vanilla beans combine in this sunny jam. The result is a preserve with a delicate floral aroma and bright flavor.
Ingredients
- 5 cups chopped apricots
- 3 cups sugar
- 1 vanilla bean, split and scraped
- 2 tbsp lemon juice
Instructions
- Combine apricots, sugar, lemon juice and vanilla bean seeds and pod in a preserving pan.
- Bring to a boil, stirring constantly until sugar dissolves. Reduce heat and simmer until apricots break down.
- Continue cooking until jam thickens and holds its shape. Remove the vanilla bean pod.
- Fill hot, sterilized jars with jam, leaving 1/4-inch headspace.
- Wipe rims, apply lids and process in boiling water for 10 minutes. Let cool completely.
This jam is delicious on everything from toasted brioche to Greek yogurt. It also makes a lovely glaze for fruit tarts.
