Fig and Honey Spread
Ripe figs and floral honey make an elegant spread that’s less sweet than traditional jams. A touch of lemon brightens the flavors and keeps the color vibrant.
Ingredients
- 2 lbs fresh figs, stemmed and chopped
- 1 cup honey
- 1/2 cup sugar
- 1/4 cup lemon juice
- Zest of one lemon
Instructions
- Combine figs, honey, sugar, lemon juice and zest in a saucepan and let sit for 15 minutes to draw out juices.
- Cook over medium heat, stirring frequently, until the figs soften and the mixture thickens, 30–40 minutes.
- Mash with a fork for a rustic texture or purée for a smoother spread.
- Spoon hot spread into sterilized jars, leaving 1/4-inch headspace. Wipe rims and seal.
- Process in boiling water for 10 minutes. Let cool before storing.
This spread shines on a cheese platter—try it with blue cheese or Brie—or slathered on buttered toast.
