Gingered Peach Preserves
Sweet summer peaches get a zingy upgrade with fresh ginger in this preserve. The ginger adds a gentle heat that balances the fruit’s sweetness, making a preserve that’s equally good on toast or spooned over grilled pork.
Ingredients
- 5 lbs ripe peaches, peeled and chopped
- 3 cups granulated sugar
- 2 tbsp fresh grated ginger
- 2 tbsp lemon juice
- 1 package pectin (optional)
Instructions
- Bring a large pot of water to a boil. Score peaches, blanch for 30 seconds and plunge into ice water. Peel, pit and chop.
- Combine peaches, sugar and lemon juice in a preserving pan. Bring to a rolling boil.
- Add grated ginger and continue boiling, stirring frequently, until mixture thickens and gels (about 20 minutes).
- If using pectin, add according to package instructions for a firmer set.
- Ladle hot preserves into prepared jars, remove bubbles and wipe rims. Apply lids and process in a boiling-water bath for 10 minutes.
These preserves bring a hint of spice to your morning toast, and they’re fantastic spooned over pound cake or mixed into yogurt for a quick dessert.
