Pickled Carrots with Dill
Crunchy carrot sticks pickled with dill and garlic make a refreshing snack or side dish. They’re simple to prepare and brighten up any meal.
Ingredients
- 4 cups carrot sticks
- 2 cups water
- 2 cups white vinegar
- 2 tbsp sugar
- 2 tbsp salt
- 4 sprigs fresh dill
- 2 cloves garlic, halved
Instructions
- Blanch carrot sticks in boiling water for 2 minutes, then plunge into ice water to keep crisp.
- Pack carrots, dill sprigs and garlic halves into sterilized jars.
- Bring water, vinegar, sugar and salt to a boil to make brine. Pour over carrots to cover.
- Tap jars to release air bubbles and add more brine if needed.
- Seal and process in a boiling-water bath for 10 minutes, or refrigerate for quick pickles.
These pickled carrots stay crunchy and are delicious on snack platters or tucked into lunch boxes.
