Pickled Carrots with Dill

Crunchy carrot sticks pickled with dill and garlic make a refreshing snack or side dish. They’re simple to prepare and brighten up any meal.

Ingredients

  • 4 cups carrot sticks
  • 2 cups water
  • 2 cups white vinegar
  • 2 tbsp sugar
  • 2 tbsp salt
  • 4 sprigs fresh dill
  • 2 cloves garlic, halved

Instructions

  1. Blanch carrot sticks in boiling water for 2 minutes, then plunge into ice water to keep crisp.
  2. Pack carrots, dill sprigs and garlic halves into sterilized jars.
  3. Bring water, vinegar, sugar and salt to a boil to make brine. Pour over carrots to cover.
  4. Tap jars to release air bubbles and add more brine if needed.
  5. Seal and process in a boiling-water bath for 10 minutes, or refrigerate for quick pickles.

These pickled carrots stay crunchy and are delicious on snack platters or tucked into lunch boxes.
