Blueberry Lavender Jam
This jam marries juicy blueberries with the gentle floral scent of culinary lavender. It’s a sophisticated twist on a classic preserve that will delight at breakfast or tea time.
Ingredients
- 6 cups blueberries
- 3 cups granulated sugar
- 2 tbsp lemon juice
- 2 tsp dried culinary lavender
- 1 package pectin (optional)
Instructions
- Gently crush blueberries in a jam pot and stir in sugar and lemon juice.
- Bring to a boil over medium-high heat, then reduce and simmer until berries burst and juice thickens.
- If using pectin, add according to package directions for a firmer set.
- Stir in dried lavender during the last few minutes of cooking so its flavor infuses without becoming bitter.
- Ladle hot jam into sterilized jars, leaving 1/4-inch headspace, and process in a boiling-water bath for 10 minutes.
The subtle floral note makes this jam perfect for topping scones or spreading on goat cheese crostini.
