Sweet Beet Relish
This vibrant relish combines sweet beets, onions and apples with vinegar and spices. It’s a tangy accompaniment for burgers, sausages or cheese.
Ingredients
- 4 cups cooked, diced beets
- 2 cups diced onion
- 2 cups diced apple
- 1 1/2 cups sugar
- 1 cup apple cider vinegar
- 1 tbsp mustard seeds
- 1 tsp ground allspice
Instructions
- In a saucepan, combine beets, onion, apple, sugar, vinegar, mustard seeds and allspice.
- Bring to a boil over medium heat, stirring until sugar dissolves.
- Reduce heat and simmer until vegetables are tender and mixture thickens, about 30 minutes.
- Ladle hot relish into sterilized jars, leaving 1/2-inch headspace. Cap and seal.
- Process in a boiling-water bath for 10 minutes. Cool and store.
Use this relish to top burgers or serve it on a charcuterie board for a pop of color and flavor.
